COOK'S HUMORI don't know about you, but I'm still full of Thanksgiving turkey and it looks like I'm not through eating yet. It's not my fault - it's tradition. December brings another whole month of national holidays and holidays mean celebrating, celebrating means eating, and I'm just caught up in the whole mad whirl. Luckily, some of these December holidays have already passed me by unawares, starting with "National Eat a Red Apple Day" on December 1st. Looking back, though, I'm pretty sure I celebrated that one accidentally because I bought a bag of those new Sugar Crisp apples recently and have been eating them fairly regularly. If nothing else, it should keep the doctor away. I know I didn't celebrate "National Wear Brown Shoes Day" on December 4th because I don't own a pair of brown shoes. I bought a pair of brown leather heels in 1980 and they sat in the closet for years without ever being worn because they didn't match any of my clothes. I finally gave them to my daughter and come to think of it, I've never seen her wear them either. All the same, had I known about this holiday I would indeed have celebrated it with something brown - like a dark chocolate Milky Way. Nor did I celebrate "National Noodle Ring day" on the 11th. Does anyone know what a Noodle Ring is? Spaghetti-O's maybe? I do remember seeing a Noodle Ring recipe once. It was a ring mold made with noodles, milk, cheese, flour and butter and baked in the oven. Sorta like macaroni and cheese in the round with a hole in the middle. Then you unmold it and fill the center with veggies. Spaghetti-O's sound a lot less complicated; open a can - heat and eat.Next, believe it or not, is National Ding-A-Ling Day on December 12th. Also, believe it or not, there's an official National Ding-A-Ling Club in Melrose, Illinois. So it's that or Chuck Berry's old "Ding-A-Ling" song people celebrate on that day. Personally, I prefer none of the above. Best way I can think of to celebrate is with these Ding-a-ling Cookies. Just melt a 12-oz. package of butterscotch morsels, stir in a half cup of peanuts and a can of Chinese noodles. Drop by teaspoonsful on waxed paper and let harden. No muss, no fuss, no baking, and no musical tribute to Chuck Berry's Ding-A-ling. Then there's "National Lemon Cupcake Day" on December 15th, one I'd certainly be happy to pucker up my lips for. A box of lemon cake mix and some lemon buttercream icing and I'm in business.Don't be left in the dark on December 21st which is National Flashlight Day, so let's shed a little light on that subject. It falls on the shortest day (and longest night) of the year - the Winter Solstice. With all those dark hours, you might need a little more light than a flashlight can provide, so just open the refrigerator door. Not only will that light up the kitchen, but while the door's open, you can raid the frig for something to eat in celebration of this national holiday.Finally, there's Christmas, and you're probably already cooking up a storm for this big celebration. But if you have room for more and a little extra time, here's a cheery, cherry salad you'll find in my frig on December 25th. Or you can save it for New Year's Eve, the month's last holiday on December 31st. (Carole Wahler can be contacted at cjwahler@sbcglobal.net)CHEERY CHERRY COLA SALAD1 8-oz. can crushed pineapple, undrained1 10-oz. bottle maraschino cherries, undrained1 3-oz. package cherry-flavored gelatin3 oz. cream cheese, softened3/4 cup cola-flavored beverage1/2 cup chopped pecansWhipped topping, optional Drain pineapple and cherries, reserving liquids in a medium saucepan. Sprinkle gelatin over liquid mixture, and let stand one minute. Cook over medium heat, stirring constantly, until gelatin dissolves; remove from heat. Add cream cheese, stirring until smooth. Stir in cherries (I cut them in half first), cola-flavored beverage, and pecans. Pour into a serving dish or a lightly oiled 4-cup mold. Cover and chill until firm. Serve with whipped topping if desired.
