If you like a sweet treat that's quick to fix and if Coconut Macaroons are a treat to you, try this. It should make at least two dozen cookies and is a snap to beat up. Just beat one egg, add a small can of sweetened condensed milk, 2 and 3/4 cups coconut and 1/4 teaspoon almond extract. Stir the mixture all together, allow to stand a couple of minutes to thicken, drop by heaping teaspoons onto a well-greased cookie sheet, bake in a 350 degree oven until the crust is golden and go sit down with a cupa and let the good taste roll.
Speaking of rolling, the wind that rolled through our area for the last couple of nights was something else. The-man-around-the-house slept through most of it but I can't say the same for me. Rhoddie really welcomed a round of fresh bedding and the other animals were all snug in their apartments.
Skylar and Jared will be here tomorrow, Valentine's Day, and I can't imagine anything better unless it would be more little visitors. Jared is coming tonight but Skylar has to "see to his flock" after school and will come in the morning. Having animals to care for is one way of preparing a kid to be a responsible grown-up, that is if he or she enjoys the critters they have and take pride in the outcome. Last year Skylar got first place with his Bantem rooster and Jared dreams of the day when he can do the same. Dylan is a cattleman by choice and hopes to do as well this year as last with his calf or calves. Pap and I feel like winners anytime a grandkid "puts on a proud and happy face."
I think that the new T.V. system is really going to work well. A new set of rabbit ears and that little black box has made a real difference at our house and that's a little ahead of the date. We can receive Parkersburg, W. Va. as clearly as though we were on one of the dishes or cable. PBS channels are already using the new system and it's as clear as being there.
I have a soft corduroy men's blazer that I intend to try my hand and turn into a Brown Kernen Bear. I don't know how it'll work out but taking my time, staying between the lines and not getting overwrought outta' help a lot. I'm not calling it a Teddy Bear, it'll be a one of a kind Kernen Bear. A stand-out with no fear of being outshone by the other guys! I have a good selection of buttons, trim, and a whole lot of scraps I've been saving "for someday." Why, one of my readers even sent me some Marine Corps. deco and stickers. I see this bear as clearly as if I'd already started to work....
I brought home some really nice fresh fruits and veggies from Riesbeck's this past week. While the boys are here we will likely have a game of Dominoes and the above mentioned. Along with fresh popped corn and a plate of cheese, it will be well received.
Hubby bought me a beautiful white African Violet for Valentine's Day and it makes a pleasing picture in the center of our table. I sat it on a large white doily, along with an amber glass oil lamp and it's lookin' good. I send you a late, by date, Valentine from the heart.
