HARVARD BEETS

Ingredients:

1 15-oz. can sliced beets, drain but save juice

1/2 cup sugar

1 Tbsp. cornstarch

1/3 cup cider vinegar

Dash of salt and pepper

Reserved beet juice

Mix sugar and cornstarch in a medium-sized saucepan. Add vinegar, salt, pepper and beet juice. Cook and stir on medium-low hea tuntil thickened. Carefully stir in beets to heat through.
